Apple pie on the parchment with fresh apples and cinnamon sticks

Apple Pie


500g organic plain flour, plus extra for dusting
100g icing sugar, sifted
250g good-quality butter, cut into small cubes
2 large free-range eggs, beaten
1 splash milk and 1 extra egg for egg wash.

Apple Mixture:
6 medium cooking apples.
2/3 tablespoon sugar to taste.
Half teaspoon of cinnamon.

Cooking Instructions

Preheat the oven to 180°C/350°F/gas 4.
Peel apples, slice and remove the core if you wish
Put in large heavy bottomed pan with few splashes of water, the sugar and cinnamon. Cook on medium heat on hob until soft.
Add more sugar to taste if you wish.
Sift flour and icing sugar into a bowl.
Blend butter into flour and icing sugar using fingers until it resembles breadcrumbs.
Mix in egg and milk until dough is formed. Do not over work.
Flour a surface, half the dough. Roll out one half on floured surface, line the bottom of a pie dish. Trim to fit up to the top of dish.
Add the apple mixture.
Roll out second dough, place over the filling, trim to fit.
Use the trimmings to make any decorations.
Egg wash the entire top of pie.
Bake in oven for 30 minutes until golden brown.
Serve with custard, cream or icecream.
